Tomato Barley Soup

Bring the water to a boil in a large covered pot. Add remaining ingredients. Cook uncovered over medium heat, stirring frequently, for 1¼ hours or until barley is soft and soup is thick.


Ingredients:
  • 2 qts. water
  • 2 large cans tomatoes, crushed with your hands
  • ¼ cup parsley, chopped
  • 2 large onions, chopped
  • ¼ cup oil
  • ¼ t dried basil and dill
  • ½ lb. barley
  • salt and pepper to taste
