Lentil Salad

Mix all ingredients. Enjoy!


Ingredients:
  • 1 cup french lentils, cooked until soft
  • ¼ cup olive oil
  • 1 T balsamic vinegar
  • 2 T celery, chopped
  • 2 T garlic, shallots, or scallions
  • 12 dried tomatoes (reconstituted), chopped
  • 1/3 cup feta cheese, crumbled
  • Dash of pepper
