Lemon Squares

In a bowl, blend flour (1 cup), margarine and ¼ c sugar until smooth. Press mixture into 11"x7"x1½" pan.

Bake in preheated oven at 325° for 20 minutes.

In a bowl, combine the remaining ingredients. Beat until well-blended. Spread this mixture over the hot baked crust and return the pan to the oven for and additional 25 minutes.


Ingredients:
  • ½ c margarine, softened
  • 1¼ c sugar
  • 2 eggs, lightly beaten
  • 3 T lemon juice
  • ¼ t salt
  • ½ t baking powder
  • 1 c sifted flour
  • 1 t - 1 T grated fresh lemon rind
  • 2 T flour
