Joan Mondale’s Pumpkin Bread

Sift together dry ingredients in a large bowl. Add remaining ingredients in specified order and mix well.

Bake on greased 9"x5" loaf pan at 375° for 75-90 minutes. Bread should pull slightly away from sides of pan or an inserted toothpick comes out clean.

Cool in pan on wire rack.


Ingredients:
  • 1½ cups sugar
  • 1 t baking powder
  • ¾ t salt
  • ½ t each of ground cloves, nutmeg, and cinnamon
  • 12/3 cup flour
  • ½ cup salad oil
  • ½ cup water
  • 1 cup canned pumpkin
  • 2 eggs
  • ½ cup chopped nuts
  • ½ cup chopped dates
