Dad’s Favorite Oatmeal Raisin Cookies

Preheat oven to 375°. In a small bowl, combine dry ingredients. Set aside.

In a large bowl, combine butter, brown sugar, eggs and orange juice. Beat until creamy. Gradually add flour mixture.

Stir in oats, raisins, nuts, and orange rind. Drop by slightly rounded tablespoons onto greased cookie sheets.

Bake 10-12 minutes. Makes 4 dozen.


Ingredients:
  • 2 c unsifted flour
  • 2 t baking powder
  • 1 t baking soda
  • 1 t cinnamon
  • 1 t salt
  • 1 c butter, softened
  • 1½ c brown sugar, firmly packed
  • 2 eggs
  • 1 T orange juice
  • 1½ c quick-cooking oats, uncooked
  • 1 c raisins
  • 1 c pecans, chopped (optional)
  • 1 t grated orange rind/LI>
