Cranberry Sour Cream Coffee Cake

Cream together margarine and sugar. Add unbeaten eggs one at a time.

Add dry ingredients alternately with sour cream, ending with dry ingredients. Add flavoring.

Grease and flour a 9" x 9" pan. Place a layer of batter on the bottom of the pan. Add ½ of the cranberries and spread evenly throughout the pan.

Add remaining batter, putting remaining cranberries on top. Sprinkle with walnuts. Bake at 350° for 55 minutes. Cool.


Icing:

Mix together all ingredients. Spread on top while cake is warm and let it drizzle over the sides.

  • ½ cup margarine (1 stick)
  • 1 cup sugar
  • 2 eggs
  • 1 cup sour cream (½ pint)
  • 1 t almond flavoring
  • 2 cups flour
  • ½ t salt
  • 1 t baking powder
  • 1 t baking soda
  • ½ cup chopped walnuts
  • 17 oz. can whole cranberries

Icing:
  • ¾ cup confectioner’s sugar
  • 2 T water or milk
  • ½ t almond flavoring.
